Fool Yourself Fit\'s White Chili

White Chili
Serves 6

INGREDIENTS:
Nonstick Spray
4 stalks celery, diced
3 medium poblano peppers, seeded and deveined, diced
2 medium onions, diced
2 clove garlic, minced
2 teaspoon ground cumin
1 teaspoon ground coriander
3/4 teaspoon cayenne pepper, to taste
1 pound 99% fat-free ground turkey or chicken
1 (15.5-ounce) can white cannellini beans, rinsed
1 (15.5-ounce) can navy beans beans, rinsed
3 cups low-sodium chicken broth
1 ¼ teaspoon dried oregano
1 (15.5-ounce) can white hominy, rinsed
½ cup fresh cilantro, chopped

GARNISHES:
Nonfat sour cream, a dollop atop each serving
Cilantro, a sprig of leaves atop sour cream
Lime wedges, 2 wedges arranged on top of each serving

INSTRUCTIONS:
1.    Spray a large stock pot with nonstick cooking spray and set over medium heat. Sautee the celery, onions, and peppers until soft, about 8 minutes.

2.    Add the garlic, cumin, coriander, and cayenne pepper. Stir to combine.

3.    Add the ground turkey or chicken and continue to cook. Break up the meat as it cooks.

4.    When the meat has turned white, add the navy beans, white cannellini beans, and chicken broth.  Combine, partially cover the pot with a lid, and allow to cook on low for about 25 minutes.

5.    Add the hominy, oregano, and fresh cilantro. Partially cover again and allow to cook on low for ten minutes or until you are ready to eat.

6.    Serve each portion with a dollop of nonfat sour cream, fresh cilantro, and lime wedges.

SERVING SUGGESTION:
Serve with whole wheat biscuits, fresh cornbread, or baked tortilla chips!
