Upside-Down Pizza
Serves 6

INGREDIENTS:
I pound 99% fat free ground chicken or turkey
1 cup soy crumbles (grillers or sausage-style)
1 onion, quartered and thinly sliced
1, 8 oz. package sliced mushrooms
1 can “no salt added” spinach, squeezed dry
1 teaspoon black pepper
1 (14-15 oz.) can “no salt added” diced tomatoes
1 (14-15 oz.) jar or can of pizza sauce
2 tablespoons tomato paste (optional – if you don’t have it around just leave it out)
1 (8 oz.) can plain tomato sauce or 1 cup of any variety of pasta sauce you have around
Pinch of red pepper flakes (optional, to taste)
1 package shredded fat-free mozzarella cheese (equals two cups)
1 cup white whole wheat flour (regular whole wheat works too)
1 cup fat free buttermilk
½ cup egg substitute
½ teaspoon low-sodium salt
½ cup reduced fat parmesan-style grated topping

INSTRUCTIONS:
1.    Preheat oven to 400 degrees and spray a 9 x 13 inch casserole dish with nonstick cooking spray. Set aside.
2.    Spray a large skillet with nonstick cooking spray and set over medium-high heat. Add the ground turkey or chicken to the pan and as start breaking it up with a fork or wooden spoon as it cooks.
3.    Add the onions, mushrooms, and soy crumbles and cook until the meat is no longer pink and the onions and mushrooms are getting soft.
4.    Add the well-drained spinach and black pepper to the pan and incorporate the spinach into the mixture (it likes to clump up).
5.    Add the tomato products and red pepper flakes (optional) and cook for a few more minutes, until everything is cooked through and well incorporated.
6.    While the meat and tomato mixture finishes simmering on the stove, prepare the crust batter. Grab a medium sized bowl and add the flour, milk, egg substitute, and salt. Stir to combine and set aside (this can be made in advance and left in the fridge until you are ready to use it if you want to save time).
7.    Transfer the meat and tomato mixture to the casserole dish and spread it into an even layer.
8.    Sprinkle the mozzarella cheese over the entire mixture.
9.    Dollop the dough mixture evenly over the mozzarella cheese. The dough will spread some as it cooks so don’t obsess over spreading it perfectly. Rustic is good here!
10.    Lastly, sprinkle the parmesan cheese evenly over the top of the casserole.
11.    Place in the middle rung of the preheated oven and cook for 25-35 minutes, until bubbly and golden brown on top.
12.    Allow to cook for about 5 minutes before cutting and serving.
