Quick-Cooking Cinnamon Raisin Oatmeal Recipe
Serves 1
INGREDIENTS:
Microwave Safe Bowl
1/2 Cup Rolled Oats (quick-cooking or whole rolled)
1/2 Teaspoon Cinnamon (add more if you like more)
1-3 Packets Splenda or sweetener of choice (start with one packet of Splenda and adjust to taste)
2 Tablespoons Raisins
½ Cup Skim Milk, Almond Milk, Soy Milk, Rice Milk, or Water (Add enough to cover the oatmeal and saturate it. Use more if you like your oatmeal thin, use less if you like it thick.)
INSTRUCTIONS
1. Put all ingredients in the bowl and mix.
2. Place the bowl in the microwave and cook for 45 seconds. Take it out, give it a stir, and then put it back in the microwave for another 30 seconds and check if it’s ready.
3. Cooking time will vary by microwave, amount of liquid used, and by the size of bowl.
SERVING SUGGESTIONS:
For a well-rounded breakfast, serve oatmeal with a piece of fruit and ½ cup of fat-free cottage cheese OR with cooked egg beaters and fruit.
