Low-Fat & High Fiber Chicken Nuggets
Serves 4

Fool Yourself Fit chicken_nuggets_chili_sauce

INGREDIENTS:
1 pound boneless, skinless chicken breasts – trimmed of any remaining visible fat and cut into nugget-sized pieces.
1/4 cup oat flour (any flour works here: soy flour, wheat flour, brown rice flour, even white flour)
1/4 tsp paprika
1/4 tsp freshly ground black pepper
¼ cup egg substitute
1/4 cup fat free or low fat buttermilk
1 tablespoon honey
1 cup bran flakes, crushed (you can use any cereal here – just try to use one with some fiber in it!)
Optional Extras: You can add extra flavors, herbs, and spices to the bran flakes. Kids will probably prefer these nuggets without any extra flavor, but adults might want to kick them up! Consider adding any combination of the following: reduced-fat parmesan-style grated cheese, garlic powder, onion powder, cayenne powder (for heat), chopped rosemary, Italian herbs, parsley, chives, and mustard powder.

INSTRUCTIONS:
1.    Preheat oven to 450 degrees. Coat a baking sheet with nonstick cooking spray.
2.    Trim and cut the chicken.
3.    Prepare an assembly line consisting of three plates or bowls: one with the flour, paprika, and pepper, one with the egg substitute, buttermilk, and honey, and one with the crushed bran flakes (and “optional extras”).
4.    Coat each piece of chicken in the first bowl of flour and shake off excess. Drop the floured chicken into the egg and buttermilk bowl and allow excess to drip off. Finally, coat each nugget in the cereal mixture. Make sure you cover every little bit of chicken in the cereal mixture! Place all finished nuggets on the baking sheet.
5.    Put baking sheet in the oven and cook for 5 minutes, turn each nugget over, and continue to cook for another 5 minutes – or until golden brown.

SERVING SUGGESTIONS:
Serve nuggets with an array of dipping sauces and a side of carrots and celery. Examples of dipping sauces include:
-Honey and Mustard (mixed together)
-BBQ
-Buffalo Sauce
-Fat-Free Blue Cheese Dressing
-Fat-Free Thousand Island Dressing (mixed with horseradish for a kick!)
-Warm Marinara Sauce
-Ketchup
